Ingredients

  • Kiva Dark Chocolate: ½ to 1 full Kiva Dark Chocolate Bar (10-20 pieces broken up).

  • Salted Butter: 9 tablespoons (approx. 1 stick + 1 tbsp), room temperature. Grass-fed Irish butter is highly recommended.

  • Light Brown Sugar: 1 cup, packed.

  • Egg Yolks: 3 large egg yolks.

  • Vanilla Extract: 1 tablespoon.

  • All-Purpose Flour: 1 ¾ cups.

  • Baking Soda: ¾ teaspoon.

  • Dark Chocolate: ¼ cup high-quality dark chocolate, roughly chopped.

  • Topping: Coarse sea salt.


Instructions

1. Prep and Cream

Preheat your oven to 350°F and line a baking sheet with parchment paper. In a large bowl, beat the softened butter and brown sugar on high speed for about 3 minutes until the mixture is light and fluffy.

2. Incorporate Yolks and Vanilla

Beat in the egg yolks one at a time, ensuring each is fully incorporated. Scrape down the sides of the bowl and mix in the vanilla extract.

3. Mix Dry Ingredients

In a separate small bowl, whisk together the flour and baking soda. Add the dry mixture to the wet ingredients, mixing on low until just combined. Fold in the chopped dark chocolate (not the Kiva bar yet!) until evenly distributed.

4. Portion and Infuse

Scoop the dough into balls and place them on the baking sheet two inches apart. Press your broken Kiva Dark Chocolate pieces into the tops of the dough balls. This ensures every cookie has a precise visible dose. Press the tops down slightly.

5. Bake and Cool

Bake for 8–10 minutes until the edges are just turning golden brown. Remove from the oven and let them sit on the tray for a few minutes to set. Sprinkle immediately with coarse sea salt.

6. Final Set

Move the cookies to a wire rack to cool completely. Store in an airtight container to maintain that signature chewiness.

To ensure you reach your desired experience, follow these portioning tips:

  • For a Standard 5mg Dose: Divide your dough into 20 small cookies and top each with one full rectangle (one serving) of Kiva chocolate.

  • For a Stronger 10mg Dose: Divide your dough into 10 larger cookies and top each with two rectangles (two servings) of Kiva chocolate.

  • Baker’s Tip: If you prefer the chocolate inside the dough, chop your Kiva bar evenly and fold it in during Step 3. For the most accurate dosing, use a kitchen scale to ensure each dough ball is the same weight.
